Package or piece by piece?

Booking suppliers individually can be cheaper and gives you exact control. It also means you own the research, the permits, the timeline and the 7am weather decision. A package prices that work and the contingency behind it.

Neither is better. Choose the package if your date is fixed, you are travelling from overseas, or the idea of chasing five suppliers across a time zone sounds like the opposite of a wedding. Choose piece by piece if you are flexible, local-ish and enjoy the planning.
